So as I ran into some issues (that were fixable) to get Ubuntu and Fedora installed – everywhere I read, everyone said "Why don’t you just use virtual box?"
Being an inquisitive mind, I found http://www.virtualbox.org/ and downloaded it. This seems to be a far more mature version of what Microsoft Virtual PC wants to be – and it runs these OSes with now issue! While I was at it, I decided to see how Solaris is different nowadays too. All 3 of these installed very easily on VirtualBox – although I haven’t tried installing any Microsoft OSes (and VirtualBox is a Sun product!)
So if you are going to mess with these other OSes, it seems VirtualBox is the way to go!
